One of the greatest and simplest Spanish snacks is Mediterranean Toast: “Tostas mediterráneas”. This Spanish recipe at its most rudimentary simply consists of rubbing a bit garlic into stale bread or toast, then a bit of tomato and then dousing with olive oil. Tostas mediterráneas are delicious for breakfast or as a mid-morning snack to fend off the hunger pangs. They are probably most popular in coastal regions of Catalonia or Valencia, but can be found in most bars and cafés throughout Spain. This particular Spanish recipe for Tostas mediterráneas is a bit fancy as it uses anchovies and figs, but I think these add a really nice dimension and some welcome extra nutrients. Enjoy!

“Tostas mediterráneas”

Ingredients for 4 people:

4 slices of large rustic bread
1 clove of garlic
2 ripe tomatoes
8 anchovies (from a can)
4 ripe figs
4 tablespoons of extra virgin olive oil

Preparation:

Cut the bread in half and toast it lightly.
Cut one end of the garlic clove and scrape it all over the bread.
Cut the tomatoes in half and also scrape on the bread.
Put the slices on a baking tray and cover with the pulp of the figs.
Put the anchovies on the toasts, drizzle a bit of olive oil and serve immediately.
