I notice when you are asking for a table, you address the waiter/waitress as tú. Is this normal in Spain?

In response to your question, yes it is more usual in Spain to address a waiter/waitress with "tú" rather than "usted". However, "usted" might be used when speaking with a much older waiter/waitress.
